Its Saturday and the men in my life are out diving at Shark Alley in Port Elizabeth ……. I am not a fan of the sea or sharks!!! I decided to try out my Mum’s biscuit recipe for Marula nut biscuits with a friend and surprise them for afternoon tea.. As I did not have access to Marula nuts ……. I have used macadamia nuts chopped up and was rather pleased with the result, you could use any kind of edible nut for this recipe. I am sharing so that if you do live in Africa in an area where you have Marula trees,you can try out this recipe. A nice touch for your guests tea tray while on Safari.

Recipe
Turn on your oven to 180 – a moderate oven heat
- 1 1/4 cup of flour
- 5 tablespoons of castor sugar
- 1/4 teaspoon baking soda
- pinch of cinnamon
- 1/2 teaspoon of vanilla essence
- pinch of salt
- 4 tablespoons of chopped nuts
- 115g – half a cup of melted butter
In a mixing bowl sift the flour,salt and baking soda
In a second bowl beat and mix the butter , sugar and vanilla essence
Add 1 egg to the flour mixture and beat until the mixture is thick, fold in the nuts gently to this mixture
Refridgerate dough for 25 minutes – grease your baking tray with butter or olive oil so the biscuits will not stick to the tray
take a table spoon of dough and roll into a ball and place on the tray – press flat with a fork – leave a space of 4cm between each biscuit
bake in a moderate oven for 10 – 12 minutes
Remove from the oven and place biscuits on a cooling rack
