Butternut Salad

Ingredients – serves 6 – 8

  • 1 medium butternut – cut in blocks and grate
  • 2 oranges cut out of the segments
  • 2 tablespoon fresh ginger chopped

Dressing for salad

  • 3 tablspoons Wine Vinegar
  • 4 tablespoons Orange juice ( chop off the ends of the oranges and squeeze)
  • 1 TBSP Fresh Ginger
  • 1 TBSP Honey
  • 1 TBSP Olive oil

Allow the dressing to stand for 3 hours – sieve out ginger and pour over your salad.
